Culturally Appropriate Meals in Institutions / Comidas culturalmente apropiadas en las instituciones
This session will amplify the social and nutritional value of culturally rooted foodways. What does it look like to meaningfully engage the community to inform what meals are provided in cafeterias and other public meal settings? Presenters will share their meal planning processes, menus, and how cultural foodways are archives of ancestral knowledge that serve as a foundation for sustainability, nutrition, and wellness education for the communities they serve.

Community-Driven Food Responses to the Pandemic / Respuestas alimentarias impulsadas por la comunidad ante la pandemia
The COVID-19 pandemic did not invent food insecurity and inequitable food access in Cook County, but it has exacerbated many of these existing issues. Many have lost their jobs, but may not qualify for adequate unemployment benefits to cover their needs. At the same time, the federal government has rolled back SNAP benefits, leaving many more families, especially in Black and Brown communities, without critical access to food. Cook County residents have shown up for one another in a big way by ensuring good food is available for all those in need. Organizers have also recognized that there is an opportunity to build long term solutions through this challenging time--responding to food insecurity in ways that build community wealth and sustainability while providing healthy, culturally relevant emergency meals. Learn from an inspiring and driven panel of organizers about the challenges and successes in building community through food during the pandemic.

La pandemia por la COVID-19 no inventó la inseguridad alimenticia ni el acceso desigual en el condado de Cook, pero ha exacerbado muchos de estos problemas existentes. Muchas personas perdieron su empleo, pero no califican para los beneficios correspondientes por desempleo para satisfacer sus necesidades. Del mismo modo, el gobierno federal ha reducido los beneficios SNAP, dejando a muchas más familias, en particular de las comunidades negra y de color, sin acceso crítico a alimentos. Many food chain workers are on the frontlines of COVID-19: harvesting our food, processing meat, coordinating package delivery, stocking grocery store shelves, and preparing & serving meals in restaurants. This session will discuss the workplace safety, health, and welfare issues food chain workers have experienced since the pandemic started--though none of these issues are necessarily "new." Learn about what organizers are doing in their workplaces and how you can support.

Muchos trabajadores de la cadena alimenticia están en el frente de batalla de la COVID-19: cosechan nuestros alimentos, procesan carne, coordinan la entrega de paquetes, almacenan provisiones en los estantes de las tiendas, y preparan y sirven comidas en restaurantes.
