Veronica is a research assistant with CFPAc working with Professor Weslynne Ashton to explore the possibilities of food hubs in Chicagoland. She is passionate about supporting others in creating their new futures of an equitable, regenerative food system. Food is a daily ritual with a profound ability to shape culture, community, health, economy, environment. Her love of food comes from her mixed family, where religion and politics could be freely discussed but the correct way to cook rice was too controversial. She will soon graduate from IIT with a double master's in design and business. Before her studies, she spent 10 years leading brand strategies in Mexico City, working with brands such as Kraft, HSBC, and Ford.
